Featured on the Netflix series 'Chef's Table,' Orkin became known for talking about the importance of the "slurp" when it came to ramen. However, what's equally important is the speed at which you eat it. With noodle dishes, the longer they are in the hot soup, the more they expand and lose consistency.
“All the effort I’ve spent in ten years learning how to make these noodles, they have about 10 minutes of life,” Orkin said in a video for Bon Appétit. He describes a typical male customer in Tokyo, who’d come in and drain a bowl in four minutes. “In New York, on the other hand, 20-40 minutes for a bowl of ramen. It’s a little bit heartbreaking,” he said.
Next time you are picking a restaurant to catch up with friends at, don't go to ramen.
