In a modern world of extreme dieting and vegetable juicing, bacon-infused cocktails are here to reject the fads and stick to the classics—meat and whiskey.

Krissy Harris, a bar director for The Wrens, told Mic.com that “If anything, [whiskey and bacon drinks] appeal to a countermarket. These people are going against the majority. They’re like, ‘I’m not gonna count my calories, I’m going to have a bucket of fries and a bacon-bloody mary for breakfast.”

Mixing animal fat with alcohol actually has some benefits. The savory smokey taste of bacon helps cut the bite in liquors such as whiskey and bourbon, creating a smooth yet powerful cocktail.

Initially thought of as a brunch type of drink, meaty cocktails are now becoming a dinner-time staple that upscale restaurants are exploring. At Blue Dog in Manhattan’s Theatre District, one specialty cocktail of duck-fat-washed scotch, dry vermouth, green peppercorn syrup, and rose water is a top-selling drink. “People are much more interested in the process of making it, and they want to try it for themselves,” bar manager Aleksandra Putnam said.
